Abstract
The corndog, also known as "wiener on a stick, " is a popular street food originating from the United States, typically enjoyed for its crispy coating and savory filling. This study introduces a variation that features a crunchy exterior and a filling made of potato and ground meat, combining traditional flavor with added nutritional value. Potatoes, in particular, are rich in essential nutrients and offer several health benefits, making them an ideal component for a healthier snack alternative. The main objective of this study is to assess the level of consumer satisfaction with using potato and meat as a corndog filling and to explore its potential as a nutritious snack option. Additionally, the study aims to promote the use of affordable and accessible ingredients—specifically ground pork and potatoes—to provide a healthier, budget-friendly alternative for consumers. The study was conducted among Grade 11 Home Economics students at Bestlink College of the Philippines, utilizing a descriptive research design. Quota sampling was employed to ensure adequate representation of the target population. Data collection was carried out through a structured survey questionnaire aimed at evaluating the students’ level of satisfaction with the product. This study examined the level of satisfaction with corn dogs filled with potato and meat, focusing on key attributes such as presentation, taste, texture, and aroma. Most respondents found the product visually appealing, with its presentation being positively received by others as well. The combination of meat and potatoes was praised for its well-balanced saltiness. In terms of texture, the crispy outer layer was particularly appreciated. Overall, the majority of respondents rated the taste, texture, and presentation of the corndog as highly satisfactory. The corndog with potato and meat filling was rated positively in terms of presentation, taste, texture, and aroma. Weighted mean scores revealed that respondents found the presentation (2.98), taste (3.03), and texture (2.92) to be acceptable. Overall, the majority of participants agreed that the product was satisfying and enjoyable. Its balanced flavor, pleasant aroma, and smooth yet crunchy texture contributed to a favorable sensory experience, making it a well-received snack alternative.
