Abstract

This study assessed how the quality and consistency of classic Filipino cuisine shape guests’ dining experiences at Giligan’s Restaurant. A descriptive quantitative research design was used, and data were collected through a survey from thirty (30) customers who had ordered and tried Filipino dishes at Giligan’s Restaurant in SM Fairview. The survey measured customers’ perceptions of taste, presentation, cultural authenticity, portion size, texture, serving temperature, and overall dining experience, as well as challenges related to food quality and consistency. The results showed that Filipino dishes at Giligan’s Restaurant positively influenced guests’ dining experiences, with most customers finding the dishes authentic, appealing, and well-prepared. The findings also showed that the restaurant maintained consistent portion sizes, texture, and serving temperature. However, some minor challenges were noted, such as differences in taste preferences among age groups and sensitivity to small changes in taste and temperature among repeat customers. The study concluded that maintaining consistent food quality and presentation is important to ensure a positive dining experience, and recommendations were proposed to improve food quality and consistency.
