Abstract
Growing concerns about nutrition, environmental impact, rising food costs, and limited access to healthy food have increased interest in plant-based alternatives. However, many products still face challenges in taste, texture, and consumer acceptance, particularly in communities strongly reliant on meat. Despite growing demand, limited local research examines munggo-based products as affordable meat substitutes. Thus, this study aimed to determine the market potential and consumer acceptance of munggo nuggets as a nutritious and cost-effective alternative to traditional meat products. This study employed a descriptive research design. A structured survey questionnaire was administered to 100 parents from Barangay San Agustin, Novaliches, Quezon City, selected through convenience sampling. The instrument gathered data on demographic profile (age and monthly income), purchasing behavior factors, and product evaluation of munggo nuggets and traditional meat nuggets based based on taste, texture, nutritional value, affordability, and appearance. Data were analyzed using frequency, percentage ranking, and weighted mean. A four-point Likert scale measured agreement levels, and a z-test was used to determine significant differences between products. Findings revealed that most respondents were aged 45 years and above (45%) and earned PHP 20,001–PHP 30,000 monthly (35%). Taste, texture, and nutritional value were the strongest factors influencing purchasing decision. Respondents rated munggo nuggets highly palatability, ease of chewing, health benefits, affordability, and visual appeal. Statistical analysis showed a significant difference between munggo nuggets and traditional meat nuggets, favoring munggo nuggets (mean = 3.58 vs. 3.04; z = 11.68, p < 0.05). These results indicate strong consumer acceptance and competitive market potential. The findings indicate that munggo nuggets are a sustainable and affordable alternative to traditional meat products. Positive evaluations reflect competitive potential, possibly influenced by health awareness and rising meat prices. However, the use of convenience sampling in one community limits broader application. Future studies may include wider market testing. Overall, munggo nuggets show promise in supporting food security and local business opportunities.
